Ingredients:
2 lbs Châtel Farms Ground Beef
1 1/2 tablespoon corn flour
4 1/2 teaspoons chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon sugar
1/4 teaspoon cayenne
1/2 teaspoon paprika
1 tablespoon olive oil
1/2 onion, finely diced
1/4 cup cilantro
1 cup beef stock
Sea salt and fresh ground pepper to taste
Method:
In a small mixing bowl, combine the corn flour, chili powder, onion powder, garlic powder, cumin, sugar, cayenne pepper and paprika; mix well. Pour the spices into a 7 to 8-inch skillet and cook over low heat for 2 to 3 minutes. Remove pan from heat and set aside. Heat the olive oil in a large 3-quart saucepan, add onions and cook until tender. Add the beef, reserved spices and the stock and let simmer for 5-7 minutes or until the beef is thoroughly cooked. Add the cilantro, salt and pepper to taste; mix well. Serve with tacos, burritos, empanadas and rellenos.
For a lighter version place some meat in a lettuce leaf, wrap and serve.
