Comfort Food Revival with Homestyle Meatloaf in 2012
In case you missed it, the December 29th, 2011, episode of The Today Show featured "Top Chef Masters" judge and Saveur magazine editor James Oseland's predictions for what foods will be popular in 2012.
Among his predictions for 2012 is a return to "real, feel-good foods" or comfort foods. While we saw a touch of this last year with the popularity of meatballs, James believes that in 2012 the meatball will be giving way to the meatloaf. Similar to meatballs, meatloaf is a variable dish that works well with a world of flavors. Meatloaf is an improvement on last year's meatballs because because it provides more room for creativity. When mixed with a variety of spices, worldly flavors and fresh ingredients, it can make for quite an exciting meal.

Meatloaf has a down-home feel to it, because everyone remembers their mother's meatloaf. But this trend is focused on meatloaf as a very grown-up food, so it's a nice balance between comfort food and haute cuisine. Meatloaf is hearty, easy to prepare comfort food that promotes meals at home with family and friends. By creating different glazes or adding different ingredients you have on hand, meatloaf can be a different meal experience each time you prepare it.
The dishes featured in the Today Show segment included international varieties like a bacon-wrapped meatloaf from Denmark, a South African meatloaf made with curry and beautiul dried fruits, and a meatloaf from the Philippines with a whole hard-boiled egg in it.
