Meatloaf

Total Time: 1 hour

Ingredients:

1 lb Châtel Farms Ground Beef
1/3 cup finely diced onion
1/3 cup finely diced celery
1/3 cup finely diced carrot
2 garlic cloves, minced
1/4 cup dry white wine
1 tablespoon dried oregano
1/2 tablespoon paprika
1 lb sausage or can substitute another pound of Ground Beef
2 eggs
1 cup bread crumbs
1 tablespoon grape jelly
1/2 cup grated parmesan cheese
salt and pepper to taste

Method:

Heat one tablespoon of oil in a 10" skillet. Add the onions, celery, carrots and garlic, sauté until vegetables are tender. Add the white wine, oregano, and paprika, stirring well. Let simmer until all of the liquid has been absorbed. Set aside. In a large mixing bowl combine the beef, sausage, eggs, bread crumbs, grape jelly and parmesan cheese. Add the reserved vegetables and mix well. Add salt and pepper to taste. Turn the mixture into a greased 81/2" x 41/2" x 21/2" inch loaf pan and bake at 350°F for 45 minutes or until a meat thermometer reads 160°F. Remove from oven, pour the glaze over the meat and cook for an additional 5 minutes. Remove from oven and allow the meatloaf to cool for 5-10 minutes, slice and serve.

Serves 4-6 as dinner entrée

Meatloaf Glaze

Total Time: 7-10 min.

Ingredients:

1 cup Coca-Cola
1/2 cup ketchup
1/8 cup dijon mustard
1 1/3 tbsp fresh rosemary
1/3 cup unsalted butter
salt and pepper to taste

Method:

Coca-Cola over medium heat by half; add ketchup and dijon mustard. Whisk to combine and add fresh rosemary. Simmer for two minutes and then slowly.
